Soya Pulav



Ingredients:
  1. Biriyani Rice – 2 cups
  2. Water – 4 cups
  3. Soya chunks – 1 cup
  4. Carrot (chopped) – 4
  5. Onion – 2 Large
  6. Ginger & garlic paste – 1 Tsp each
  7. Turmeric powder – 1/2 Tsp
  8. Chilly powder – 1 Tsp
  9. Garam Masala – ¼ Tsp
  10. Coriander Leaves – ½ Bunch
  11. Oil – 1 ½ Tbsp
  12. Salt – as per taste
  13. Ghee -  2 Tbsp
Preparation:
  • In a pan boil water. When water comes to boil add salt and rice to it. Drain water when rice is cooked and keep it aside to cool. Do not overcook the rice.
  • Boil Soya chunks in salt water, drain it with your hand and keep aside.
  • Heat oil, add onion.  Sauté it well and add ginger garlic paste, carrot, soya chunks. Stir if well. Let the carrots cook well. Add salt.
  • Now add the masalas one by one. Add rice to it and combine it well.
  • Add finely chopped coriander leaves. Pour ghee. Close the lid and cook for 5-8 mins
  • Serve with raitha, chutney and pappad
Note : You can also prepare with let over rice (ponni rice)
